Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 teaspoons Cajun seasoning
- 2 cloves garlic, minced
- 1 cup orzo
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with Cajun seasoning and cook until lightly browned and cooked through. Remove and set aside.
- In the same pot, add garlic and cook until fragrant. Stir in orzo and toast for 1 minute.
- Add chicken broth and bring to a simmer. Cook, stirring often, until orzo is tender and most of the liquid is absorbed.
- Reduce heat and stir in heavy cream, Parmesan, salt, pepper, and paprika. Return chicken to the pot and simmer until sauce thickens.
- Sprinkle fresh parsley over the top before serving.
Notes
- Add spinach or sun-dried tomatoes for extra flavor and color.
- Increase Cajun seasoning or add chili flakes for more heat.
- Use shrimp instead of chicken for a seafood twist.
