Ingredients

  • 12 oz smoked sausage or kielbasa, sliced into rounds
  • 1.5 lbs baby potatoes or Yukon Golds, halved or quartered
  • 2 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 12 bell peppers, sliced (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • 1/2 tsp paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
  2. In a large bowl, toss potatoes with 1 tbsp olive oil, garlic, salt, pepper, oregano, and paprika until coated.
  3. Spread potatoes on the baking sheet and roast for 20 minutes.
  4. Meanwhile, toss sausage, onions, and bell peppers with remaining 1 tbsp olive oil and a pinch of salt and pepper.
  5. After 20 minutes, add sausage and veggies to the pan. Toss everything together and spread into an even layer.
  6. Roast for another 20–25 minutes, until potatoes are tender and edges are browned.
  7. Garnish with fresh parsley and serve hot.
