Ingredients
- 6 breakfast sausage links (fully cooked and cut into bite-sized pieces)
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 3/4 cup milk or buttermilk
- 2 tbsp melted butter or oil
- Maple syrup (optional, for serving)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
- Cook sausage links until fully cooked, then cut into bite-sized pieces and let cool.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk egg, milk, and melted butter. Stir into dry ingredients until just combined.
- Fill each muffin cup halfway with batter, place a sausage piece in the center, and add a bit more batter on top.
- Bake for 12–15 minutes until golden and cooked through. Serve warm with maple syrup.
