Ingredients

  • 6 breakfast sausage links (fully cooked and cut into bite-sized pieces)

  • 3/4 cup milk or buttermilk
  • 2 tbsp melted butter or oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Cook sausage links until fully cooked, then cut into bite-sized pieces and let cool.
  3. In a bowl, whisk together flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk egg, milk, and melted butter. Stir into dry ingredients until just combined.
  5. Fill each muffin cup halfway with batter, place a sausage piece in the center, and add a bit more batter on top.
  6. Bake for 12–15 minutes until golden and cooked through. Serve warm with maple syrup.
