Patriotic Poke Cake is a festive red, white, and blue dessert made with white cake, colorful gelatin, whipped topping, and sprinkles — perfect for 4th of July or summer celebrations.

  • Total Time: 2 hours 40 minutes (including chilling)
  • Yield: 12 to 15 servings

Ingredients

  • 1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)
  • 1 box red gelatin (strawberry or cherry flavor)
  • 1 box blue gelatin (berry blue flavor)
  • 2 cups boiling water (1 cup per gelatin flavor)
  • 1 cup cold water (½ cup per gelatin flavor)
  • 1 tub whipped topping (like Cool Whip), thawed
  • Patriotic sprinkles or decorations

Instructions

  1. Preheat oven and bake the white cake in a 9×13-inch pan according to package instructions. Let it cool slightly.
  2. Use the handle of a wooden spoon to poke holes all over the cake about 1 inch apart.
  3. Prepare red and blue gelatin separately using 1 cup boiling water and ½ cup cold water for each flavor.
  4. Spoon red gelatin over one half of the cake, and blue gelatin over the other half, allowing it to seep into the holes.
  5. Refrigerate the cake for 2 to 3 hours to allow the gelatin to set.
  6. Once chilled, spread the whipped topping evenly over the cake.
  7. Decorate with patriotic sprinkles before serving.

Notes

  • Use homemade white cake if preferred, just ensure it’s light in color.
  • Make a fruitier version by topping with sliced strawberries and blueberries.
  • Substitute whipped topping with vanilla pudding or cream cheese frosting.
  • Can be made in individual portions using cupcake tins or mason jars.
  • Best made a day in advance for full flavor and texture.
