Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
- In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in diced peaches (patted dry if fresh).
- Roll dough into balls and coat in cinnamon-sugar mixture.
- Place dough balls on prepared baking sheet, spacing them apart.
- Bake for 10–12 minutes, until edges are set but centers remain soft.
- Cool on the sheet for a few minutes, then transfer to a wire rack.

- Ensure fresh peaches are chopped small and well dried to avoid soggy dough.
