Description
A moist and comforting banana bread enriched with creamy peanut butter and naturally sweet ripe bananas. This easy one-bowl loaf is perfect for breakfast, snacks, or a simple homemade dessert.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/3 cup melted butter or vegetable oil
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped peanuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the peanut butter, melted butter or oil, and brown sugar. Mix until well combined.
- Stir in the eggs and vanilla extract until the mixture becomes smooth and creamy.
- Add the flour, baking soda, salt, and cinnamon to the bowl and gently mix until just combined. Avoid overmixing.
- Fold in chopped peanuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- Swirl extra peanut butter on top of the batter before baking for a stronger peanut flavor.
- Add chocolate chips or peanut butter chips for a sweeter loaf.
- Chopped roasted peanuts or walnuts add a crunchy texture.
