Description

A moist and comforting banana bread enriched with creamy peanut butter and naturally sweet ripe bananas. This easy one-bowl loaf is perfect for breakfast, snacks, or a simple homemade dessert.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup melted butter or vegetable oil
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped peanuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the peanut butter, melted butter or oil, and brown sugar. Mix until well combined.
  4. Stir in the eggs and vanilla extract until the mixture becomes smooth and creamy.
  5. Add the flour, baking soda, salt, and cinnamon to the bowl and gently mix until just combined. Avoid overmixing.
  6. Fold in chopped peanuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • Swirl extra peanut butter on top of the batter before baking for a stronger peanut flavor.
  • Add chocolate chips or peanut butter chips for a sweeter loaf.
  • Chopped roasted peanuts or walnuts add a crunchy texture.
  • Sprinkle oats on top before baking for a rustic look and texture.
  • Store in an airtight container at room temperature for up to 3 days.
  • Refrigerate for up to 5 days or freeze slices for up to 2 months.
  • Warm slices in the microwave for 15–20 seconds or toast lightly before serving.
