Ingredients
- 3 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/3 cup unsalted butter, melted (or use vegetable oil)
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Optional: 1/2 cup chocolate chips or chopped peanuts
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash bananas. Whisk in peanut butter, melted butter, brown sugar, eggs, and vanilla until smooth.
- In a separate bowl, mix flour, baking soda, and salt.
- Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
- Stir in chocolate chips or chopped peanuts if using.
- Pour batter into prepared loaf pan and smooth the top. Optionally, swirl extra peanut butter or sprinkle toppings.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for best flavor and sweetness.
- Swirl extra peanut butter on top before baking for added flair.
- Top with chopped peanuts or granola for crunch.
- Freeze individual slices for up to 2 months.
- Reheat slices in the microwave or toaster for a warm treat.
