A rich and creamy peanut butter and chocolate cottage cheese mousse that blends into a smooth, velvety dessert packed with protein. It delivers deep chocolate flavor with a nutty finish while staying surprisingly wholesome.
Ingredients
- 1 1/2 cups cottage cheese
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons natural peanut butter
- 2–3 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons dark chocolate chips (optional topping)
- 2 tablespoons chopped peanuts (optional topping)
Instructions
- Add cottage cheese, cocoa powder, peanut butter, maple syrup or honey, vanilla extract, and salt to a high-speed blender or food processor.
- Blend for 1–2 minutes, scraping down the sides as needed, until completely smooth and creamy with no visible curds.
- Taste and adjust sweetness or cocoa powder if desired, then blend briefly again.
- Spoon the mousse into serving bowls or jars.
- Refrigerate for 30–60 minutes until chilled and slightly firm.
- Top with dark chocolate chips or chopped peanuts before serving if desired.
Notes
- Use full-fat cottage cheese for a richer texture or low-fat for a lighter option.
- Add 1 tablespoon melted dark chocolate for deeper chocolate flavor.
- Almond butter can be substituted for peanut butter.
- Store in an airtight container in the refrigerator for up to 3 days.
- Stir before serving if the mousse firms up in the fridge.
