Pineapple Fritters are golden, crispy rings of pineapple dipped in a light sweet batter, fried to perfection and dusted with sugar or drizzled with honey—tropical sunshine in every bite.

  • Total Time: 25 minutes
  • Yield: 8–10 fritters

Ingredients

  • 810 pineapple rings (fresh or canned, drained and patted dry)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 1 large egg
  • ¾ cup milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
  • Oil for frying (vegetable or canola)
  • Powdered sugar, honey, or cinnamon sugar for topping

Instructions

  1. Heat oil in a deep skillet or saucepan to 350 °F (175 °C).
  2. In a bowl, whisk flour, baking powder, sugar, and salt.
  3. Beat in egg, milk, and vanilla until smooth and thick enough to coat pineapple rings.
  4. Dip each pineapple ring into batter, letting excess drip off.
  5. Fry coated rings in batches for 2–3 minutes per side until golden and puffed.
  6. Use a slotted spoon to transfer fritters to paper towels to drain.
  7. While warm, dust with powdered sugar, drizzle with honey, or sprinkle with cinnamon sugar.

Notes

  • Add a pinch of cinnamon or nutmeg to the batter for warm spice.
  • Use crushed pineapple batter to make bite-size fritters.
  • Coconut twist: use coconut milk and sprinkle shredded coconut on top.
  • Air-fryer option: fry at 375 °F for about 10 minutes, flipping halfway.
  • For gluten-free, substitute with a 1:1 gluten-free flour blend.
