Instructions
- Heat oil in a deep skillet or saucepan to 350 °F (175 °C).
- In a bowl, whisk flour, baking powder, sugar, and salt.
- Beat in egg, milk, and vanilla until smooth and thick enough to coat pineapple rings.
- Dip each pineapple ring into batter, letting excess drip off.
- Fry coated rings in batches for 2–3 minutes per side until golden and puffed.
- Use a slotted spoon to transfer fritters to paper towels to drain.
- While warm, dust with powdered sugar, drizzle with honey, or sprinkle with cinnamon sugar.
