Description

Protein Cranberry Orange Loaf is a moist, citrusy quick bread packed with tart cranberries and boosted with protein. Perfect for breakfast, snacks, or a post-workout treat, it’s as nourishing as it is delicious.


Ingredients

  • 1 cup all-purpose flour (or 1/2 cup all-purpose + 1/2 cup oat flour)
  • 1/2 cup vanilla or unflavored protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup Greek yogurt or sour cream
  • 1/3 cup orange juice
  • 1 tablespoon orange zest
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil or melted butter
  • 3/4 cup dried or fresh cranberries
  • Optional: 1/4 cup chopped nuts or a simple orange glaze

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs with Greek yogurt, orange juice, orange zest, honey, and coconut oil.
  4. Add wet ingredients to dry and stir until just combined. Do not overmix.
  5. Fold in cranberries and optional nuts.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
