This moist and warmly spiced Pumpkin Bread is packed with real pumpkin flavor and perfect for fall. Easy to make in one bowl, it’s ideal for breakfast, dessert, or a cozy snack.
Ingredients
- 1 cup pumpkin purée (not pumpkin pie filling)
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- Optional: 1/2 cup chopped nuts, chocolate chips, raisins, or streusel topping
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together pumpkin purée, granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
- In a separate bowl, mix flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually stir the dry ingredients into the wet mixture just until combined. Do not overmix.
- Fold in any optional add-ins like nuts or chocolate chips.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
