Description

Ingredients

  • 2 cups fresh strawberries, halved
  • 1 tablespoon olive oil
  • 2 tablespoons honey or maple syrup, plus more for drizzling
  • 1/2 teaspoon vanilla extract
  • 1 cup whole-milk ricotta cheese
  • 1 teaspoon lemon zest
  • Pinch of salt
  • 4 slices crusty bread
  • Fresh basil or mint, torn (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the strawberries with olive oil, honey or maple syrup, and vanilla extract.
  3. Spread the strawberries on a baking sheet in a single layer.
  4. Roast for 18–22 minutes, until soft, glossy, and lightly caramelized.
  5. While the strawberries roast, whip the ricotta with lemon zest and a pinch of salt until smooth and creamy.
  6. Toast the bread slices until golden and crisp.
  7. Spread a generous layer of whipped ricotta on each slice of toast.
  8. Spoon warm roasted strawberries over the ricotta.
  9. Finish with an extra drizzle of honey and fresh herbs if desired.
