Ingredients
- 2 cups fresh strawberries, halved
- 1 tablespoon olive oil
- 2 tablespoons honey or maple syrup, plus more for drizzling
- 1/2 teaspoon vanilla extract
- 1 cup whole-milk ricotta cheese
- 1 teaspoon lemon zest
- Pinch of salt
- 4 slices crusty bread
- Fresh basil or mint, torn (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the strawberries with olive oil, honey or maple syrup, and vanilla extract.
- Spread the strawberries on a baking sheet in a single layer.
- Roast for 18–22 minutes, until soft, glossy, and lightly caramelized.
- While the strawberries roast, whip the ricotta with lemon zest and a pinch of salt until smooth and creamy.
- Toast the bread slices until golden and crisp.
- Spread a generous layer of whipped ricotta on each slice of toast.
- Spoon warm roasted strawberries over the ricotta.
- Finish with an extra drizzle of honey and fresh herbs if desired.
- Serve immediately.
