Description

A simple yet elegant side dish or appetizer made with caramelized roasted sweet potato rounds, salty feta, a drizzle of honey, and fresh herbs. Sweet, savory, and beautifully balanced in every bite.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into ½-inch rounds
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • ½ cup crumbled feta cheese
  • 2 tbsp honey (or more to taste)
  • Fresh thyme or parsley, for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, pepper, and paprika until evenly coated.
  3. Arrange in a single layer on the baking sheet. Roast 20–25 minutes, flipping halfway, until golden and caramelized.
  4. Transfer to a serving platter. While warm, sprinkle with crumbled feta and drizzle with honey.
  5. Finish with fresh thyme or parsley before serving.
