Description

A rich and nostalgic no-bake Salted Caramel Banana Ritz Icebox Cake layered with buttery crackers, creamy filling, fresh bananas, and luscious salted caramel. This chilled dessert softens into a cake-like texture and slices beautifully.


Ingredients

  • 1 sleeve buttery round crackers
  • 3 ripe bananas, sliced
  • 1 1/2 cups heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup salted caramel sauce
  • 1/4 teaspoon sea salt

Instructions

  1. Beat the heavy whipping cream in a mixing bowl until stiff peaks form. Set aside.
  2. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the cream cheese mixture until light and fully combined.
  4. Arrange a single layer of buttery crackers in the bottom of a square or rectangular dish.
  5. Spread a layer of the cream mixture over the crackers.
  6. Add a layer of sliced bananas.
  7. Drizzle salted caramel sauce over the bananas and sprinkle lightly with sea salt.

  9. Cover and refrigerate for at least 4 hours or overnight to set.
