A fun and flavorful twist on tacos, this walking taco casserole layers seasoned beef, creamy cheese, crunchy chips, and fresh toppings for a comforting, crowd-pleasing meal that’s easy to bake and serve.
Ingredients
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/2 cup diced onions
- 1 cup salsa or 1 can Rotel (diced tomatoes with green chilies)
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 2 cups crushed corn chips (Fritos or tortilla chips), divided
- Optional toppings: diced tomatoes, shredded lettuce, jalapeños, green onions, olives, hot sauce
Instructions
- Preheat oven to 375°F. Grease a casserole dish.
- In a skillet over medium heat, cook ground beef with onions until browned. Drain excess grease.
- Stir in taco seasoning and a splash of water. Simmer for 2 minutes.
- Add salsa or Rotel, reduce heat, and stir in sour cream and half the cheese until combined.
- Spread half the crushed chips in the bottom of the casserole dish.
- Layer meat mixture evenly over chips.
- Top with remaining cheese and bake for 15–20 minutes until hot and bubbly.
- Just before serving, sprinkle with remaining chips and your choice of fresh toppings.
