A fun and flavorful twist on tacos, this walking taco casserole layers seasoned beef, creamy cheese, crunchy chips, and fresh toppings for a comforting, crowd-pleasing meal that’s easy to bake and serve.

Ingredients

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1/2 cup diced onions
  • 1 cup salsa or 1 can Rotel (diced tomatoes with green chilies)
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 2 cups crushed corn chips (Fritos or tortilla chips), divided
  • Optional toppings: diced tomatoes, shredded lettuce, jalapeños, green onions, olives, hot sauce

Instructions

  1. Preheat oven to 375°F. Grease a casserole dish.
  2. In a skillet over medium heat, cook ground beef with onions until browned. Drain excess grease.
  3. Stir in taco seasoning and a splash of water. Simmer for 2 minutes.
  4. Add salsa or Rotel, reduce heat, and stir in sour cream and half the cheese until combined.
  5. Spread half the crushed chips in the bottom of the casserole dish.
  6. Layer meat mixture evenly over chips.
  7. Top with remaining cheese and bake for 15–20 minutes until hot and bubbly.
  8. Just before serving, sprinkle with remaining chips and your choice of fresh toppings.
