These Sausage Biscuit Bites are flaky, golden mini biscuits filled with savory sausage, onions, and optional cheese—perfect for breakfast, brunch, or snacking on the go.

Ingredients

  • 1 can refrigerated biscuit dough (buttermilk-style)
  • 1/2 lb ground sausage (mild or spicy)
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup grated cheddar or pepper Jack cheese (optional)
  • 2 tbsp melted butter (for brushing)
  • 1 tbsp chopped fresh parsley (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin or line with paper liners.
  2. In a skillet, cook sausage with onions and garlic over medium heat. Season with salt and pepper. Drain any excess grease and set aside.
  3. Separate biscuit dough and flatten each piece into a 3-inch circle.
  4. Spoon sausage mixture (and cheese, if using) into the center of each circle. Fold dough over filling and seal to form a ball.
  5. Place each filled biscuit into the muffin tin.
  6. Brush tops with melted butter and bake for 12–15 minutes until puffed and golden brown.
  7. Cool slightly and garnish with chopped parsley if desired. Serve warm.
