Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- Fresh basil leaves
- 2 tablespoons balsamic glaze
Instructions
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Place chicken breasts on the pan and drizzle with olive oil.
- Season both sides with garlic powder, oregano, salt, and black pepper.
- Scatter halved cherry tomatoes around the chicken.
- Bake for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven and top each breast with fresh mozzarella slices.
- Return to oven for 3–5 minutes, until cheese melts.
- Let rest for a few minutes.
- Top with fresh basil leaves and drizzle with balsamic glaze before serving.
