Ingredients
- For the shredded chicken:
- 1 1/2 pounds boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- For the creamy chimichurri sauce:
- 1 cup fresh parsley, packed
- 1/4 cup fresh cilantro
- 3 cloves garlic
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil
- 1/4 cup mayonnaise or Greek yogurt
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- For serving:
- 8 small flour or corn tortillas
- 1 cup shredded lettuce or cabbage
- 1/2 cup diced tomatoes
- 1/4 cup crumbled queso fresco or feta
- Lime wedges
Instructions
- Place chicken breasts, broth, chili powder, cumin, smoked paprika, salt, and pepper in a saucepan or skillet. Simmer over medium heat for 20–25 minutes until chicken is tender and fully cooked.
- Remove chicken, shred with two forks, and return to the pot with a splash of broth to keep moist.
- While chicken cooks, blend parsley, cilantro, garlic, red wine vinegar, olive oil, mayonnaise or yogurt, red pepper flakes, salt, and pepper in a food processor until smooth.
- Warm tortillas in a skillet or on a grill.
- Assemble tacos by filling each tortilla with shredded chicken, drizzle with creamy chimichurri, and top with lettuce, tomatoes, and queso fresco.
- Serve with lime wedges on the side.
