Description

Ingredients

  • For the shredded chicken:
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • For the creamy chimichurri sauce:
  • 1 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 3 cloves garlic
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 1/4 cup mayonnaise or Greek yogurt
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • For serving:
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup crumbled queso fresco or feta
  • Lime wedges

Instructions

  1. Place chicken breasts, broth, chili powder, cumin, smoked paprika, salt, and pepper in a saucepan or skillet. Simmer over medium heat for 20–25 minutes until chicken is tender and fully cooked.
  2. Remove chicken, shred with two forks, and return to the pot with a splash of broth to keep moist.
  3. While chicken cooks, blend parsley, cilantro, garlic, red wine vinegar, olive oil, mayonnaise or yogurt, red pepper flakes, salt, and pepper in a food processor until smooth.
  4. Warm tortillas in a skillet or on a grill.
  5. Assemble tacos by filling each tortilla with shredded chicken, drizzle with creamy chimichurri, and top with lettuce, tomatoes, and queso fresco.
  6. Serve with lime wedges on the side.
