Description

Delicate and refreshing dessert bars featuring bright lemon flavor with a subtle hint of lavender, layered over a soft buttery base and finished with a light dusting of powdered sugar.


Ingredients

  • Base:
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • Filling:
  • 3 eggs
  • 3/4 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp dried culinary lavender, finely crushed
  • Topping:
  • 2 tbsp powdered sugar (for dusting)

Instructions

  1. Preheat oven to 175°C (350°F) and line a baking pan with parchment paper.
  2. In a bowl, mix flour, butter, and sugar until a soft dough forms.
  3. Press the dough evenly into the bottom of the prepared pan.
  4. Bake the base for 10–12 minutes until lightly set.
  5. In another bowl, whisk eggs, sugar, lemon juice, lemon zest, baking powder, salt, and crushed lavender.
  6. Pour the filling over the partially baked crust.
  7. Return to the oven and bake for 20–25 minutes until the filling is set.
  8. Allow to cool completely before removing from the pan.
  9. Dust with powdered sugar and slice into bars.

  • Crush lavender finely to avoid strong floral bursts.
  • Add orange zest for a citrus variation.
