Ingredients
- Base:
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/4 cup granulated sugar
- Filling:
- 3 eggs
- 3/4 cup granulated sugar
- 1/3 cup lemon juice
- 1 tbsp lemon zest
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp dried culinary lavender, finely crushed
- Topping:
- 2 tbsp powdered sugar (for dusting)
Instructions
- Preheat oven to 175°C (350°F) and line a baking pan with parchment paper.
- In a bowl, mix flour, butter, and sugar until a soft dough forms.
- Press the dough evenly into the bottom of the prepared pan.
- Bake the base for 10–12 minutes until lightly set.
- In another bowl, whisk eggs, sugar, lemon juice, lemon zest, baking powder, salt, and crushed lavender.
- Pour the filling over the partially baked crust.
- Return to the oven and bake for 20–25 minutes until the filling is set.
- Allow to cool completely before removing from the pan.
- Dust with powdered sugar and slice into bars.

- Use culinary-grade lavender to ensure safe and pleasant flavor.
- Crush lavender finely to avoid strong floral bursts.
- Add orange zest for a citrus variation.
- A shortbread crust can be used for a richer base.
