  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup brown sugar

  • 2/3 cup unsulphured molasses
  • 1/2 cup milk (or buttermilk)

  2. In a large bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  3. In a separate bowl, whisk melted butter, brown sugar, eggs, molasses, milk, and vanilla until smooth.
  4. Pour wet ingredients into dry and stir just until combined—do not overmix.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
