Ingredients

  • 1/2 cup shredded pepper jack cheese
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon Cajun or Creole seasoning
  • 1 teaspoon hot sauce (e.g., Louisiana hot sauce)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil or butter
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the shrimp in olive oil or butter with garlic and a pinch of Cajun seasoning until pink. Set aside to cool slightly.
  3. In a mixing bowl, blend cream cheese, sour cream, mayonnaise, lemon juice, hot sauce, remaining Cajun seasoning, salt, and pepper until smooth.
  4. Stir in cooked shrimp, green onions, cheddar, and pepper jack cheese (reserving a bit of each cheese for topping).
