A comforting and flavorful pasta dish featuring lasagna noodles rolled with a creamy spinach and cheese filling, baked in rich marinara sauce.
Ingredients
- 8 lasagna noodles
- 1 1/2 cups ricotta cheese
- 1 1/2 cups spinach (fresh or frozen, drained)
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 egg
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook lasagna noodles according to package instructions. Drain and lay flat on a clean surface.
- In a bowl, mix ricotta cheese, spinach, mozzarella, parmesan, egg, garlic, salt, and black pepper until well combined.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Spread the spinach mixture evenly over each noodle.
- Roll up each noodle and place seam-side down in the baking dish.
- Spoon remaining marinara sauce over the roll ups and sprinkle extra mozzarella cheese on top.
- Bake in a preheated oven at 180°C (350°F) for 25–30 minutes until bubbly and heated through.
- Let cool slightly before serving.

- Drain spinach thoroughly to avoid excess moisture.
- Handle noodles gently to prevent tearing.
- Add vegetables like mushrooms or zucchini for extra flavor.
- Mix in pesto for a fresh twist.
- Add extra sauce when reheating to keep moist.
