Description

Strawberry Cheesecake Cookies are soft, chewy cookies that taste like a bite-sized version of the classic dessert, featuring cream cheese, fresh strawberries, and a buttery base.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh or freeze-dried strawberries, chopped
  • Optional: 1/2 cup white chocolate chips or strawberry glaze for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter, cream cheese, granulated sugar, and brown sugar until creamy and smooth.
  4. Add eggs and vanilla extract, mixing until fully combined.
  5. Gradually fold in the dry ingredients until a soft dough forms.
  6. Gently fold in chopped strawberries and optional white chocolate chips.
  7. Scoop dough onto the prepared baking sheet, spacing cookies about 2 inches apart.

  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
