Ingredients
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup melted butter
- For the cheesecake layer:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- For the banana pudding layer:
- 1 box (3.4 oz) instant banana pudding mix
- 2 cups cold milk
- 2 ripe bananas, sliced
- 1 cup whipped topping or whipped cream
- For the strawberry crunch topping:
- 20 golden Oreos or vanilla sandwich cookies
- 1/2 cup freeze-dried strawberries
- 1/4 cup melted butter
- For topping/garnish:
- Fresh strawberries, sliced
- Whipped cream or extra crunch topping (optional)
Instructions
- Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes and cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Mix in vanilla and sour cream.
- Pour over crust and bake 45–50 minutes or until center is set. Let cool completely, then refrigerate for at least 4 hours or overnight.
- Whisk banana pudding mix with cold milk until thickened. Fold in whipped topping and layer sliced bananas over cheesecake. Spread pudding mixture on top. Chill again to set.
- Pulse cookies and freeze-dried strawberries in a food processor. Stir in melted butter until crumbly.
- Sprinkle strawberry crunch over pudding layer. Garnish with sliced strawberries and whipped cream if desired.
Notes
- Use a shortbread or vanilla wafer crust for variety.
- Add sliced strawberries between cheesecake and pudding for more fruit flavor.
- For a no-bake version, use a no-bake cheesecake filling.
- Mix a little cream cheese into the pudding for extra richness.
- Best served chilled; do not freeze due to pudding and banana texture.
