Ingredients
- 2 cups frozen strawberries, hulled
- 1 cup frozen pineapple chunks (or pineapple juice ice cubes)
- 1/3 to 1/2 cup pineapple juice
- Optional: 1 tbsp coconut milk or light agave syrup
- Optional garnish: fresh strawberry slices or mint leaves
Instructions
- Place frozen strawberries and pineapple chunks into a high-speed blender or food processor.
- Add 1/3 cup pineapple juice and blend on high, scraping down the sides as needed, until smooth and creamy.
- If desired, add coconut milk or agave for extra creaminess or sweetness.
- If mixture is too thick, add a splash more juice to help blend.
- Scoop or pipe into cups or cones and garnish with strawberry slices or mint if using.
- For firmer texture, freeze the mixture for 1–2 hours before serving.
Notes
- Use only frozen fruit for soft-serve consistency.
- Add juice slowly to avoid making it too runny.
- Let sit at room temperature for a few minutes if frozen solid before serving.
- Great for using up ripe summer strawberries.
