Ingredients
- 1 box yellow cake mix
- 4 large eggs
- 1 cup sour cream
- 3/4 cup vegetable oil
- 3/4 cup strawberry jam or preserves
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- For the glaze:
- 2 cups powdered sugar
- 2–3 tablespoons milk or cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix cake mix, eggs, sour cream, and oil until smooth and well combined.
- In a small bowl, mix together brown sugar and cinnamon.
- Pour half of the cake batter into the prepared dish and spread evenly.
- Drop spoonfuls of strawberry jam over the batter, then sprinkle the cinnamon-sugar mixture evenly on top.
- Pour the remaining cake batter over the filling and gently spread it to cover.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, whisk powdered sugar, milk, and vanilla together to make the glaze.
- Pour glaze over the warm cake right out of the oven. Let it soak in as the cake cools slightly before serving.
Notes
- Try adding fresh strawberries or cream cheese to the filling for extra richness.
- Use raspberry jam or a strawberry-flavored glaze for variation.
- To enhance flavor, mix a spoonful of jam directly into the cake batter.
- Store at room temperature for 3 days or refrigerate for up to 5 days.
- Freeze individual slices wrapped well and thaw as needed.
