Description

A vibrant and refreshing salad made with mixed greens, fresh berries, aromatic herbs, feta cheese, and a bright lemon dressing.

Ingredients

  • 4 cups mixed salad greens
  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/4 cup fresh mint leaves
  • 2 tablespoons chopped fresh basil
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the mixed salad greens in a large bowl.
  2. Add the sliced strawberries, blueberries, and raspberries over the greens.
  3. Sprinkle the fresh mint leaves and chopped basil evenly throughout the salad.
  4. Add the crumbled feta cheese and chopped walnuts.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper until the dressing is smooth.
  6. Drizzle the dressing over the salad.
  7. Gently toss until the ingredients are evenly coated.
  8. Serve immediately while the greens remain crisp.

Notes

  • Avocado slices can be added for extra creaminess.
  • Pecans or almonds can replace walnuts for a different nut flavor.
  • Quinoa or grilled chicken can be added to make the salad more filling.
  • For a vegan version, omit feta or replace it with plant-based cheese.
  • Fresh berries provide the best texture, but thawed frozen berries can work if well drained.
  • Store salad and dressing separately in airtight containers for up to 1 day.
