Ingredients

Instructions

  1. If making gnocchi: In a bowl, mix mashed sweet potatoes, flour, egg, and salt into a soft dough. Divide and roll into ropes, cut into 1-inch pieces, and gently shape with a fork if desired.
  2. Bring a pot of salted water to a boil. Cook gnocchi in batches; they’re done when they float. Transfer to a plate with a drizzle of oil to prevent sticking.
  3. In a large skillet, melt butter or heat olive oil over medium heat. Sauté shallots and garlic until softened, about 2–3 minutes.
  4. Add white wine and simmer for 2–3 minutes to reduce slightly.
  5. Stir in cream, rosemary, and thyme. Simmer for 3–4 minutes until slightly thickened.
  6. Add cooked gnocchi to the skillet and toss to coat in the sauce.
