Ingredients
- For the gnocchi (optional):
- 2 medium sweet potatoes, roasted and mashed

- 1 egg
- 1/2 tsp salt
- For the herbed white wine sauce:
- 2 tbsp butter or olive oil
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 tsp fresh rosemary, minced
- 1 tsp fresh thyme leaves
- 1/2 cup dry white wine (e.g., Sauvignon Blanc)
- 3/4 cup heavy cream or plant-based cream
- 1/3 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- If making gnocchi: In a bowl, mix mashed sweet potatoes, flour, egg, and salt into a soft dough. Divide and roll into ropes, cut into 1-inch pieces, and gently shape with a fork if desired.
- Bring a pot of salted water to a boil. Cook gnocchi in batches; they’re done when they float. Transfer to a plate with a drizzle of oil to prevent sticking.
- In a large skillet, melt butter or heat olive oil over medium heat. Sauté shallots and garlic until softened, about 2–3 minutes.
- Add white wine and simmer for 2–3 minutes to reduce slightly.
- Stir in cream, rosemary, and thyme. Simmer for 3–4 minutes until slightly thickened.
- Add cooked gnocchi to the skillet and toss to coat in the sauce.
- Stir in Parmesan cheese until melted and combined. Adjust seasoning with salt and pepper.
- Garnish with fresh parsley and serve warm.
