- 2 cups sweet potatoes, roasted or boiled and mashed

- 1 unbaked 9-inch pie crust
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9-inch pie crust in a pie dish.
- In a large bowl, combine mashed sweet potatoes, granulated sugar, brown sugar, melted butter, and spices. Mix until smooth.
- Beat in the eggs, then stir in the milk and vanilla until creamy and fully combined.
- Pour filling into the unbaked pie crust and smooth the top.
- Bake for 50–60 minutes, or until the center is set and a knife inserted near the middle comes out mostly clean.
- Cool completely before slicing. For best flavor and texture, chill for a few hours or overnight.
Notes
- For a brighter flavor, add a splash of orange juice or zest.
- A tablespoon of bourbon or maple syrup adds rich depth.
- Blind bake the crust for 10 minutes before filling to prevent sogginess.
