Description

A bold and flavorful chicken dish coated in a sweet, tangy raspberry glaze with a spicy kick from jalapeños, creating a perfect balance of sweet and heat.


Ingredients

  • 500 g chicken breasts or thighs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup fresh raspberries
  • 1/3 cup raspberry jam
  • 12 jalapeños, sliced
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1/4 cup chicken broth (optional)

Instructions

  1. Season chicken with salt and black pepper.
  2. Heat olive oil in a skillet over medium heat and cook chicken until golden and fully cooked. Remove and set aside.
  3. In the same pan, sauté garlic and jalapeños until fragrant.
  4. Add raspberries, raspberry jam, honey, soy sauce, and lime juice.
  5. Stir and simmer until the sauce becomes smooth and slightly thickened.
  6. Add chicken broth if needed to thin the sauce.
  7. Return the chicken to the pan and coat with the sauce.
  8. Cook for an additional 2–3 minutes until heated through.
  9. Serve warm with rice or vegetables.
