Ingredients
- 500 g chicken breasts or thighs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup fresh raspberries
- 1/3 cup raspberry jam
- 1–2 jalapeños, sliced
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1/4 cup chicken broth (optional)
Instructions
- Season chicken with salt and black pepper.
- Heat olive oil in a skillet over medium heat and cook chicken until golden and fully cooked. Remove and set aside.
- In the same pan, sauté garlic and jalapeños until fragrant.
- Add raspberries, raspberry jam, honey, soy sauce, and lime juice.
- Stir and simmer until the sauce becomes smooth and slightly thickened.
- Add chicken broth if needed to thin the sauce.
- Return the chicken to the pan and coat with the sauce.
- Cook for an additional 2–3 minutes until heated through.
- Serve warm with rice or vegetables.
