Description

A fresh and flavorful sushi-inspired bowl featuring tender teriyaki-glazed salmon, seasoned rice, and crisp vegetables for a satisfying and easy meal.


Ingredients

  • 2 salmon fillets
  • 1/3 cup teriyaki sauce
  • 1 cup sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cucumber, sliced
  • 1 avocado, sliced
  • 1/2 cup carrots, shredded
  • 1/2 cup edamame
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • 2 tablespoons soy sauce

Instructions

  1. Cook sushi rice according to package instructions using 2 cups of water.
  2. Once cooked, mix the rice with rice vinegar, sugar, and salt. Let it cool slightly.
  3. Cook the salmon in a pan or oven over medium heat, brushing with teriyaki sauce until fully cooked and glazed.
  4. Slice the cucumber and avocado, and shred the carrots.
  5. Assemble the bowls by adding a base of sushi rice.
  6. Place the teriyaki salmon on top and arrange cucumber, avocado, carrots, and edamame around it.
  7. Garnish with green onions and sesame seeds.
  8. Drizzle soy sauce over the bowl and serve immediately.
