Description

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 24 tablespoons cold water or aquafaba (chickpea liquid)
  • Paprika for garnish (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Place the drained chickpeas into a food processor. For an extra creamy texture, optionally remove the loose skins from the chickpeas before blending.
  2. Add the tahini, lemon juice, garlic, olive oil, cumin, and salt to the processor.
  3. Blend the mixture until it begins to become smooth.
  4. While the processor is running, slowly add cold water or aquafaba a little at a time to help create a lighter and creamier texture.
  5. Continue blending for several minutes until the hummus becomes very smooth and fluffy.
  6. Taste the hummus and adjust seasoning if needed, adding more lemon juice or salt if desired.
  7. Transfer the hummus to a serving bowl.
  8. Drizzle a small amount of olive oil on top and garnish with paprika and chopped parsley if desired.
