Ingredients
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs

- 8 oz white chocolate, chopped
- 1 1/2 cups heavy cream (for white chocolate mousse)
- 1 tsp unflavored gelatin (for white chocolate mousse)
- 2 tbsp water (for white chocolate mousse)
Instructions
- Preheat the oven to 350°F (175°C) and line a springform pan with parchment paper.
- Melt butter and mix with sugar, eggs, and vanilla extract.
- Stir in flour, cocoa powder, and salt. Mix until combined.
- Pour into prepared pan and bake for 20–25 minutes or until set. Let cool completely.
- Bloom gelatin in water for milk chocolate mousse. Melt milk chocolate and let it cool slightly.
- Whip cream to soft peaks, then fold into cooled melted chocolate along with dissolved gelatin.
- Pour over cooled brownie base and refrigerate until set.
- Repeat gelatin blooming and melting steps for white chocolate mousse.
- Fold whipped cream into melted white chocolate and add dissolved gelatin.
- Gently pour over milk chocolate layer and refrigerate overnight.
- Before serving, run a warm knife around the edge of the pan and release the springform.
- Slice using a hot knife, wiping clean between cuts for neat slices.

- Use high-quality chocolate bars for best texture and flavor.
- Can be made a day in advance to allow flavors to meld.
- Store in refrigerator for up to 4 days or freeze up to 1 month.
