Description

A hearty and nourishing one-pot chili made with lean ground turkey, tender sweet potatoes, beans, and smoky spices. This balanced and comforting meal is packed with protein and bold flavor, perfect for weeknight dinners or meal prep.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced (about 3 cups)
  • 1 bell pepper, diced
  • 1 (15 oz) can black beans or kidney beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lime juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 4–5 minutes. Stir in garlic and cook for 30 seconds until fragrant.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks. Season with salt and black pepper.
  3. Stir in diced sweet potatoes and bell pepper. Add chili powder, cumin, and smoked paprika, stirring to coat and toast the spices for 1 minute.
  4. Add crushed tomatoes, tomato paste, chicken broth, and beans. Stir well to combine.
  5. Bring to a gentle simmer, cover, and cook for 25 to 30 minutes, until the sweet potatoes are tender and the chili has thickened.
  6. Stir in fresh lime juice, adjust seasoning if needed, and serve with optional toppings if desired.

Notes

  • Add 1 cup of corn for extra sweetness and texture.
  • For more heat, add diced jalapeños or additional chili powder.
  • To make in a slow cooker, brown the turkey first, then cook everything on low for 6 to 7 hours.
  • Mash a few sweet potato cubes or beans to naturally thicken the chili.
  • Store leftovers in the refrigerator for up to 5 days in an airtight container.
  • Freeze for up to 3 months and thaw overnight before reheating.
