Ingredients
- 500g potato gnocchi
- 2 tbsp butter
- 2 tbsp sugar (for gnocchi)
- 2 cups damson plums, pitted
- 2 apples, peeled and chopped
- 1/3 cup sugar (for compote)
- 1 tbsp lemon juice
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- Powdered sugar for serving
- Chopped nuts or cream (optional)
Instructions
- In a saucepan, combine damson plums, chopped apples, sugar, lemon juice, cinnamon, and vanilla extract.
- Cook over medium heat, stirring occasionally, until the fruit softens and thickens into a compote (about 10–15 minutes).
- Meanwhile, bring a pot of water to a boil and cook the gnocchi according to package instructions until they float to the surface.
- Drain the gnocchi well.
- In a large pan, melt butter and add sugar, allowing it to lightly caramelize.
- Add the cooked gnocchi and toss until lightly golden and coated.
- Serve the warm gnocchi topped with the fruit compote.
- Finish with powdered sugar and optional nuts or cream before serving.
Notes
- Substitute damson plums with regular plums, cherries, or berries if needed.
- Adjust sugar levels to control sweetness.
- Toast nuts before adding for extra flavor and crunch.
