Ingredients
- 2 ripe pears, thinly sliced
- 6 cups mixed greens (arugula, spinach, or spring mix)
- 1/3 cup crumbled blue cheese or goat cheese
- 1/3 cup candied or toasted pecans or walnuts
- 1/4 cup dried cranberries or pomegranate seeds
- 1/4 small red onion, thinly sliced (optional)
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar or balsamic vinegar
- 1 tsp Dijon mustard
- 1 tbsp honey or maple syrup
- Salt, to taste
- Black pepper, to taste
Instructions
- Whisk together olive oil, vinegar, Dijon mustard, honey, salt, and pepper in a small bowl to make the dressing. Taste and adjust as needed.
- In a large bowl, toss mixed greens with a light coating of the dressing.
- Layer sliced pears over the greens.
- Sprinkle with cheese, nuts, cranberries, and red onion if using.
- Drizzle additional dressing over the top or serve it on the side.
