Instructions
- Prepare the Ramekins: Brush the insides of two 6-ounce ramekins with melted butter to ensure the cakes will release easily. Dust the buttered surfaces thoroughly with cocoa powder, tapping out the excess for a smooth coating.
- Mix the Batter: In a heatproof bowl, melt the chopped semi-sweet chocolate with the remaining butter over a double boiler or in short bursts in the microwave, stirring until smooth. In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened. Gradually incorporate the melted chocolate and butter mixture into the eggs. Sift the flour and cocoa powder into the wet ingredients and gently fold until just combined, being careful not to overmix.
- Fill the Ramekins: Divide the batter evenly between the prepared ramekins, filling each about 3/4 full to allow room for rising.
