Instructions
- Prepare the Vegetables: Wash and quarter the tomatoes, onion, and red bell pepper. Peel the garlic cloves. Set aside.
- Season and Air Fry: In a large bowl, toss the tomatoes, onion, garlic, and red bell pepper with olive oil, dried oregano, dried basil, salt, and pepper until evenly coated. Transfer the vegetables to the air fryer basket in a single layer.
- Roast the Vegetables: Set the air fryer to 400°F (200°C) and roast the vegetables for 15-18 minutes, shaking the basket halfway through to ensure even cooking. The vegetables should be soft and slightly charred.
- Blend the Soup: Carefully transfer the roasted vegetables to a blender or use an immersion blender directly in a large pot. Add the vegetable broth and blend until smooth. If the soup is too thick, add more broth or water until desired consistency is reached.
