Instructions

  3. Combine Wet Ingredients: In a separate bowl, whisk together the honey, melted coconut oil, egg, and vanilla extract until the mixture is smooth and cohesive.
  4. Form the Dough: Pour the wet ingredients into the dry ingredient bowl and stir thoroughly until a sticky dough forms. If using chocolate chips or chopped almonds, fold them in gently now.
  5. Shape Cookies: Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart as they will spread slightly.
