Description

Soft and chewy no-bake apricot bliss balls made with dried apricots, oats, nuts, and coconut for a naturally sweet and energizing snack perfect for busy days or healthy treats.


Ingredients

  • 1 cup dried apricots
  • 1 cup rolled oats
  • 1/2 cup almonds or cashews
  • 1/2 cup shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra shredded coconut for rolling

Instructions

  1. Add the dried apricots, rolled oats, nuts, shredded coconut, chia seeds, and salt to a food processor.
  2. Blend until the mixture forms fine crumbs.
  3. Add the honey or maple syrup and vanilla extract, then blend again until the mixture becomes sticky and holds together.
  4. If the mixture feels too dry, add a small splash of water and blend briefly.
  5. Scoop small portions of the mixture and roll them into bite-sized balls using your hands.
  6. Roll each bliss ball in extra shredded coconut.
  7. Place the bliss balls in the refrigerator for about 20 minutes to firm up before serving.
