Ingredients
- 1 cup dried apricots
- 1 cup rolled oats
- 1/2 cup almonds or cashews
- 1/2 cup shredded coconut
- 2 tablespoons honey or maple syrup
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Pinch of salt
- Extra shredded coconut for rolling
Instructions
- Add the dried apricots, rolled oats, nuts, shredded coconut, chia seeds, and salt to a food processor.
- Blend until the mixture forms fine crumbs.
- Add the honey or maple syrup and vanilla extract, then blend again until the mixture becomes sticky and holds together.
- If the mixture feels too dry, add a small splash of water and blend briefly.
- Scoop small portions of the mixture and roll them into bite-sized balls using your hands.
- Roll each bliss ball in extra shredded coconut.
- Place the bliss balls in the refrigerator for about 20 minutes to firm up before serving.
