This Arugula and Asparagus Breakfast Bowl is a fresh and vibrant morning meal combining peppery arugula, tender roasted asparagus, creamy avocado, poached egg, and a zesty lemon vinaigrette. Ingredients

Vegetables

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 cups fresh arugula
  • 1 ripe avocado, sliced

Eggs

  • 2 large eggs

Dressing

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Garnish

  • 1 tbsp toasted pine nuts (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Prepare the asparagus: Preheat your oven to 400°F (200°C). Toss the asparagus pieces with 1 tablespoon of olive oil and a pinch of salt and pepper. Spread them on a baking sheet in a single layer and roast for about 10-12 minutes until tender and slightly caramelized.
  2. Make the dressing: In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until emulsified.
  3. Poach the eggs: Bring a small pot of water to a gentle simmer and add a splash of vinegar. Crack each egg into a small bowl, then gently slip them into the simmering water. Poach for about 3-4 minutes for runny yolks or longer to your liking. Remove eggs with a slotted spoon and drain on paper towels.
  4. Assemble the bowl: In two bowls, divide the arugula evenly. Drizzle half the lemon dressing over the arugula and toss lightly. Top with roasted asparagus and sliced avocado, then place a poached egg on top of each bowl.
  5. Garnish and serve: Sprinkle with toasted pine nuts and grated Parmesan if desired. Serve immediately while the eggs are warm and runny.
