Ingredients
For the Meatballs
- 1 lb ground pork
- 1/2 cup panko breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 green onions, finely chopped
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
For the Sauce
- 1/2 cup hoisin sauce
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon sriracha (optional, for heat)
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/4 cup water
Instructions
- Prepare the Meatball Mixture: In a large bowl, combine ground pork, panko breadcrumbs, egg, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, salt, and pepper. Mix gently until all ingredients are evenly incorporated but do not overmix to keep the meatballs tender.
- Shape the Meatballs: Using your hands or a scoop, form the mixture into 1 to 1 1/2-inch meatballs. Place them on a plate or baking sheet as you go, keeping them uniform in size for even cooking.
- Make the Sauce: In a separate bowl, whisk together hoisin sauce, soy sauce, rice vinegar, brown sugar, sriracha, grated ginger, minced garlic, sesame oil, and water until well combined.
- Add Meatballs and Sauce to Crockpot: Spray the inside of the crockpot with non-stick spray. Gently place the meatballs in the crockpot in a single layer if possible. Pour the prepared sauce over the meatballs ensuring they are mostly covered.
- Cook the Meatballs: Cover the crockpot with the lid and cook on low heat for 4 to 5 hours or on high for 2 to 3 hours. The meatballs should be cooked through and tender.
- Serve: Carefully remove the meatballs from the crockpot with a slotted spoon and transfer to a serving dish. Spoon some of the sauce over the meatballs. Garnish with additional chopped green onions or sesame seeds if desired. Serve hot over steamed rice or noodles.
Notes
- For extra texture, you can brown the meatballs in a skillet before adding them to the crockpot, but this step is optional.
- Adjust the sriracha quantity to control the spiciness of the sauce.
- Leftover meatballs can be refrigerated for up to 3 days or frozen for up to 3 months.
- If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
- Gluten-free panko or breadcrumbs can be used to make this recipe gluten-free.
