Description

A delicious and elegant Asparagus and Goat Cheese Tart featuring a flaky puff pastry crust, creamy goat cheese, and fresh asparagus spears, baked to golden perfection. This recipe makes a perfect appetizer, brunch dish, or light lunch that’s easy to prepare and impressively flavorful.

Ingredients

Puff Pastry

  • 1 sheet puff pastry (thawed)

Filling

  • 6 oz goat cheese (softened)
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 clove garlic (minced)
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Topping

  • 1 lb fresh asparagus (trimmed)
  • 1 tbsp olive oil
  • 1/2 tsp salt (for asparagus)
  • 1/4 tsp black pepper (for asparagus)
  • 1 tbsp fresh thyme or chives (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prepare for the pastry.
  2. Prepare the Puff Pastry: Place the thawed puff pastry on the prepared baking sheet. Lightly score a 1-inch border around the edges with a knife, being careful not to cut all the way through; this will create a raised crust when baked. Prick the center of the pastry multiple times with a fork to prevent excessive puffing.
  3. Prepare the Filling: In a medium bowl, whisk together the eggs, heavy cream, minced garlic, lemon zest, salt, and black pepper until smooth and combined.
  4. Add the Goat Cheese: Spread the softened goat cheese evenly across the center of the puff pastry, staying inside the scored border to maintain the crust’s shape.
  5. Add the Egg Mixture: Pour the prepared egg mixture evenly over the goat cheese layer, covering it fully with the creamy blend.
  6. Arrange the Asparagus: Trim the woody ends off the asparagus spears. Neatly arrange the asparagus across the tart surface. Lightly brush the asparagus with olive oil and sprinkle a small pinch of salt and pepper to enhance flavor. Optionally, sprinkle with fresh thyme or chives for added aroma and garnish.
  7. Bake the Tart: Place the tart in the preheated oven and bake for approximately 25-30 minutes, or until the pastry is golden brown, the filling is set, and the asparagus is tender-crisp. Remove from oven and let cool slightly before slicing and serving.

Notes

  • Ensure puff pastry is fully thawed before using for best results.
  • Scoring the border without cutting all the way through helps create a nice, raised crust.
  • Pricking the center prevents the pastry from puffing too much and keeps the filling evenly distributed.
  • If fresh thyme or chives aren’t available, parsley or dill can be good substitutes.
  • For a vegetarian diet, ensure goat cheese is made with vegetarian rennet.
  • Leftover tart can be stored in the refrigerator for up to 2 days and reheated gently.
