Fish and Coating

  • 1.5 lb Cod fillet pieces (46 pieces)
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Lemon Garlic Sauce

  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil, divided
  • 2 tbsp melted butter
  • 5 garlic cloves, minced
  • 1/4 cup chopped fresh parsley leaves

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the cod.
  2. Prepare Lemon Sauce Base: In a shallow bowl, combine 5 tablespoons of fresh lemon juice, 3 tablespoons of olive oil (reserve 2 tablespoons for searing), and 2 tablespoons melted butter. Do not add the garlic yet. Set this lemon sauce aside.
  3. Mix Coating Ingredients: In another shallow bowl, whisk together 1/3 cup all-purpose flour, 1 teaspoon ground coriander, 3/4 teaspoon sweet Spanish paprika, 3/4 teaspoon ground cumin, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Set this seasoned flour mixture next to the lemon sauce.
  4. Coat the Fish: Pat the cod fillets dry using paper towels. Dip each piece first into the lemon sauce, then into the flour and spice mixture, making sure each piece is fully coated. Shake off any excess flour. Save the lemon sauce for later use.
  5. Sear the Cod: Heat 2 tablespoons extra virgin olive oil in a cast iron skillet or oven-safe pan over medium-high heat. When the oil shimmers (not smoking), place the cod fillets in the pan. Sear each side for about 2 minutes, enough to develop color but not cook through. Remove the skillet from heat.
  6. Add Garlic to Sauce and Drizzle: Add the minced garlic to the reserved lemon sauce and stir well. Drizzle this garlic lemon mixture evenly over the seared fish fillets in the skillet.
  7. Bake the Cod: Transfer the skillet to the preheated oven and bake for approximately 10 minutes. Begin checking the fish at around 8 minutes; it is done when the cod flakes easily with a fork.
