Description

Deliciously savory baked feta potatoes with a blend of thyme, oregano, and roasted garlic, enhanced by a touch of honey and fresh basil. This easy-to-make side dish features golden roasted potatoes combined with creamy feta cheese and a zesty hint of lemon for a perfect balance of flavors.


Ingredients

Potatoes

  • 2 large baking potatoes

Cheese

  • 200g block of feta cheese

Seasonings & Herbs

  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh basil for garnish

Other

  • 1 head of garlic (top cut off)
  • 1 lemon (quartered)
  • 1 tbsp honey

Instructions

  1. Preheat the oven: Preheat your oven to 200°C (390°F) to prepare for roasting the potatoes and feta.
  2. Prepare the potatoes: Wash and cube the large baking potatoes, then par-boil them in salted water for 6–8 minutes until slightly tender but not fully cooked.
  3. Dry and season potatoes: Drain the potatoes well and let them steam dry. Toss them in a baking dish with olive oil, dried thyme, dried oregano, salt, and pepper to evenly coat the cubes.
  4. Roast the potatoes: Place the baking dish in the oven and roast the potatoes for 30 to 40 minutes until they turn golden brown and crispy on the edges.
  5. Add feta and lemon juice: Remove the dish from the oven, crumble the block of feta cheese over the potatoes and squeeze lemon juice on top. Return to the oven and roast for an additional 15 minutes until the feta is warm and slightly soft.
  6. Prepare garlic and basil mix: While the potatoes roast, squeeze the roasted garlic out of its skin and mix it with fresh basil leaves to create a flavorful herb paste.
  7. Combine and finish: Toss the roasted potatoes with the garlic and basil mixture thoroughly. Drizzle honey over the top just before serving to add a subtle sweet contrast.
