Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the quesadillas to a perfect golden crisp.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and sliced mushrooms, cooking until the mushrooms release moisture and are browned. Stir in chopped spinach and cook until wilted. Season with salt and pepper to taste, then remove from heat.
- Assemble Quesadillas: Lay out the flour tortillas on a flat surface. Evenly distribute the sautéed spinach and mushroom mixture over half of each tortilla. Sprinkle shredded mozzarella and cheddar cheese on top of the vegetables. Fold the tortilla over to form a half-moon shape.
