Ingredients

Beef and Broth

  • 8 oz thinly sliced beef (sirloin or ribeye)
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1 tsp sugar

Noodles and Toppings

  • 2 packs fresh or dried ramen noodles
  • 2 eggs
  • 2 green onions, sliced
  • 1 cup baby spinach or bok choy
  • 1 tsp toasted sesame seeds
  • 1 sheet nori, cut into strips (optional)

Instructions

  1. Prepare the broth. In a large pot over medium heat, combine beef broth, garlic, ginger, soy sauce, mirin, sesame oil, and sugar. Bring to a gentle simmer and let it cook for 10 minutes to develop the flavors.
  2. Cook the beef. Add the thinly sliced beef to the broth and simmer just until the beef is cooked through, about 2-3 minutes. Remove the beef with a slotted spoon and set aside, keeping it warm.
  3. Cook the noodles. While the broth is simmering and the beef is cooking, bring a separate pot of water to a boil and cook the ramen noodles according to package instructions until tender but still firm (al dente). Drain and rinse briefly under warm water.
  4. Fry the eggs. In a nonstick skillet over medium heat, add a small amount of oil and crack the eggs in. Fry until the whites are set and the yolks are cooked to your preference (sunny side up is recommended for this dish).
  5. Assemble the ramen bowls. Divide the cooked noodles into two bowls. Ladle the hot broth over the noodles, including some garlic and ginger pieces for flavor. Top each bowl with slices of cooked beef, baby spinach or bok choy, green onions, toasted sesame seeds, and nori strips if using.
