- 4 large eggs
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds
- 1 tablespoon vegetable oil (for frying eggs)

Instructions
- Prepare the broth and beef: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté until fragrant, about 1 minute. Pour in the beef broth, soy sauce, miso paste, brown sugar, and chili paste if using. Stir well to combine and bring the broth to a gentle simmer.
- Cook the beef: Add the thinly sliced beef to the simmering broth and cook just until the beef turns brown and is tender, approximately 3-4 minutes. Remove the beef with a slotted spoon and set aside, leaving the broth on low heat.
- Prepare the noodles and vegetables: Cook the ramen noodles according to package instructions until al dente, then drain and set aside. Add the sliced mushrooms and spinach or bok choy to the broth and cook for 2-3 minutes until tender but still bright in color.
- Fry the eggs: In a non-stick skillet, heat vegetable oil over medium heat. Crack the eggs one by one and fry until the whites are set but yolks remain runny or cook to your preferred doneness. Season with salt and pepper to taste.
- Assemble the ramen bowls: Divide the cooked noodles among four bowls. Ladle the hot broth and vegetables over the noodles. Top each bowl with the cooked beef slices and a fried egg. Garnish with sliced green onions and toasted sesame seeds.
