Ingredients
For the Beef:
- 1 pound ground beef
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/4 cup water
For the Salad:
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup diced red onion
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives
- 1 cup crushed tortilla chips
For the Dressing:
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess fat. Add taco seasoning and water, stir well, and simmer for 5 minutes until the sauce thickens. Remove from heat and set aside to cool slightly.
- Prepare the Dressing: In a small bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth and well combined. Adjust seasoning to taste.
- Assemble the Salad: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, black beans, corn, shredded cheddar, and black olives. Toss gently to mix all ingredients evenly.
- Add the Beef and Dressing: Add the warm seasoned beef to the salad mixture and drizzle the dressing over the top. Toss everything gently to coat the salad evenly with dressing.
- Serve with Tortilla Chips: Just before serving, sprinkle the crushed tortilla chips on top for crunch. Serve immediately to maintain the texture contrast and freshness.
Notes
- For a lighter version, substitute Greek yogurt for sour cream and mayonnaise in the dressing.
- Add avocado slices for extra creaminess and healthy fats.
- You can make this salad vegetarian by substituting cooked seasoned lentils or plant-based meat for the ground beef.
- If you prefer a spicier salad, add diced jalapeños or a dash of hot sauce to the dressing.
- Prepare components in advance and assemble just before serving to keep the tortilla chips crisp.
