Ingredients
Soup Ingredients
- 4 medium beets, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 medium potatoes, peeled and diced
- 1 medium carrot, peeled and diced
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
To Serve
- 1 cup kefir
- Fresh dill, chopped, for garnish
- Sour cream (optional)
Instructions
- Prepare the Vegetables: Peel and dice the beets, potatoes, and carrot into small cubes. Chop the onion and mince the garlic to ensure everything cooks evenly and the flavors meld well.
- Sauté the Aromatics: In a large pot over medium heat, add a small amount of oil or butter and sauté the chopped onion and minced garlic until they become translucent and fragrant, about 3-5 minutes.
- Add Vegetables and Broth: Add the diced beets, potatoes, carrot, and the bay leaf to the pot. Pour in the vegetable broth, ensuring all ingredients are submerged. Bring the mixture to a boil.
- Simmer the Soup: Reduce heat to low and let the soup simmer gently for about 40-45 minutes, or until the beets and other vegetables are tender and easily pierced with a fork.
- Season and Blend (Optional): Remove the bay leaf, season with salt and pepper to taste. For a smoother texture, use an immersion blender to puree part or all of the soup according to your preference, or leave it chunky for a rustic texture.
- Serve with Kefir: Ladle the hot beet soup into bowls and top each with a generous spoonful of kefir. Garnish with freshly chopped dill and a dollop of sour cream if desired. Serve warm or chilled for a refreshing variation.
Notes
- Beets can bleed strongly during cooking; use a white or light-colored pot to better monitor doneness and avoid staining other items.
- Kefir adds a probiotic boost and creamy texture, but you can substitute with plain yogurt if kefir is unavailable.
- This soup can be served hot or cold, making it versatile for all seasons.
- For a richer flavor, roast the beets beforehand to bring out their sweetness before adding them to the soup.
- Storage: Leftover soup can be refrigerated for up to 3 days or frozen for up to 1 month.
